Ingredients:
  • (8) eggs
  • (2 Tbsp.) fresh oregano, finely chopped
  • (1/2 tsp.) salt
  • (1/4 tsp.) freshly ground pepper
  • (2 Tbsp.) extra-virgin olive oil
  • (1 cup) sliced red bell pepper
  • (1 bunch) scallions, trimmed and sliced
  • (1/2 cup) crumbled goat cheese

    Instructions

  1. 1With oven rack in upper third position, preheat broiler.
  2. 2Place a large nonstick, oven-safe skillet over medium heat. Add oil. When hot, add bell pepper and scallions. Stir 1 minute.
  3. 3Whisk together eggs, oregano, salt and pepper. Pour into pan and cook 2-3 minutes, swirling the pan to spread egg around.
  4. 4Top with cheese and broil 2-3 minutes, or until lightly golden. Cool 3 minutes and serve.
