  • (14 oz.) tuna steak
  • (2 Tbsp.) extra virgin olive oil
  • (1 Tbsp.) lemon juice
  • (1 clove) garlic, crushed
  • (1 Tbsp.) Dijon mustard
  • (15 oz. can) cannellini beans, drained and rinsed
  • (1 small) red onion, thinly sliced
  • (2 small or 1 medium) red peppers, seeded and thinly
  • (1/2 medium) cucumber, halved lengthwise and thinly
  • (6 cups) watercress
  • Salt and pepper, also coarsely ground black pepper
  • Lemon wedges to garnish, if desired



White Bean Tuna Salad w/Lemon Mustard Dressing

Peppered tuna steak served over a white bean, vegetable and watercress salad.

  1. 1Spray a cast iron grill pan with cooking spray, then heat to medium-high.
  2. 2Season both sides of tuna with coarsely ground black pepper. Place on grill and cook about 8 minutes or until golden brown, turning once. Set aside.
  3. 3In a large salad bowl, whisk together oil, lemon juice, garlic, mustard, salt and pepper. Add beans, onion, peppers, cucumber and watercress, toss.
  4. 4Cut tuna into 1/2 in. slices, place on top of salad. Garnish with lemon wedges and serve. Enjoy!
