warm pear arugula salad
Ingredients:
  • (1 Tbsp.) unsalted butter
  • (2) Anjou pears, each cored and cut into 12 slices
  • (1 Tbsp.) Dijon mustard
  • (1/4 cup) fresh lemon juice
  • (2 Tbsp.) maple syrup
  • (1/4 cup) extra-virgin olive oil
  • (1/2 tsp.) salt
  • (1/8 tsp.) fresh-ground pepper
  • (6 oz.) arugula
  • (1 head) romaine lettuce, washed, trimmed and cut
  • (1/3 cup) domestic blue cheese, crumbled
  • (1/2 cup) pecans, chopped
  • (1 small) red onion, thinly sliced

Warm Pear Arugula Salad

Sliced pears sauteed in butter then tossed with peppery arugula, romaine lettuce, bleu cheese and pecans.

    Instructions

  1. 1Place a large, nonstick skillet over medium heat. Add butter. When melted, add pear slices and cook 6
    minutes.
  2. 2In a large bowl, whisk together mustard, lemon juice and maple syrup. While whisking, stream in olive oil. Add salt and pepper, whisk until combined.
  3. 3Add arugula, romaine, blue cheese, pecans, onion and pears to dressing, toss and serve.
