Ingredients:
  • (1 large) carrot, thinly sliced
  • (1/4 lb.) mushrooms, thinly sliced
  • (1 large) zucchini, halved and thinly sliced
  • (1 tsp.) garlic powder
  • (8) plain or flavored 99% fat-free tortillas (8 in.
    diameter)
  • (1 cup) reduced-fat shredded Mexican cheese
  • (1 cup) salsa
  • (1 cup) fat-free sour cream

Soft tortillas filled with mixed vegetables and shredded cheese, cooked until crispy.

    Instructions

  1. 1Preheat oven to 400°F. Spray a baking sheet with cooking spray.
  2. 2Spray a medium skillet with cooking spray and place over medium heat. Add carrot. Cook 1 minute, then add mushrooms and zucchini and cook another 4 minutes. Add garlic powder, toss to combine.
  3. 3Arrange 4 tortillas on greased baking sheet in a single layer. Divide half of the cheese evenly, top with vegetables and the rest of the cheese. Top with other 4 tortillas.
  4. 4Bake 6-8 minutes, cut and serve with salsa and sour cream. Enjoy!
