Ingredients:
  • (3 Tbsp.) olive oil
  • (1/2 cup) corn kernels
  • (7) mushrooms, diced
  • (3) scallions, diced
  • (1/2 small) red bell pepper, diced
  • (2 cloves) garlic, minced
  • (1 tsp.) cumin
  • (1 small) carrot, grated
  • (1 small) potato, grated
  • (1/4 cup) silken (soft) tofu
  • Salt and pepper
  • (1/2 cup) bread crumbs

Vegan Burger Patties

These vegan patties are loaded with tofu, potatoes, corn, mushrooms and more!

    Instructions

  1. 1Place a large skillet over medium-high heat. Add 1 Tbsp. oil.
  2. 2Process tofu in a blender or food processor until smooth, set aside.
  3. 3Add corn, mushrooms, scallions and red pepper to skillet, cook 3-5 minutes, stirring occasionally. Add garlic and cumin, stir to combine and cook another minute. Remove from heat.
  4. 4Add carrot, potato, tofu, a sprinkle of salt and pepper and bread crumbs. Stir until mixture starts to stick together. Shape into 4 equal patties.
  5. 5Place skillet back over medium high heat and add 2 Tbsp. olive oil. Cook patties in skillet about 6 minutes, flipping once. Serve on whole wheat buns, if desired.
