Ingredients:
  • (1 tsp.) instant coffee powder or granules
  • (2 tsp.) vanilla extract
  • (1/2 cup) all-purpose flour
  • (1/2 cup) unsweetened cocoa
  • (1/4 tsp.) baking powder
  • (1/4 tsp.) salt
  • (1 cup) sugar
  • (1/4 cup) trans-fat free vegetable oil spread (60% to
    70% oil)
  • (3 large) egg whites

    Instructions

  1. 1Preheat oven to 350°F. Spray an 8×8 in. metal baking pan with cooking spray.
  2. 2In a small cup, combine coffee powder and vanilla extract, stir until dissolved.
  3. 3In a medium bowl, stir together flour, cocoa, baking powder and salt. In a separate bowl, whisk together sugar, vegetable oil spread, egg whites and vanilla. Add dry ingredients, stir to combine.
  4. 4Pour into greased pan and bake 22-24 minutes, or until toothpick comes out clean. Cool on a wire rack and serve.
