Ingredients:
  • (2) egg whites
  • (2/3 cup) ketchup, divided
  • (1 medium) potato, peeled and finely shredded
  • (1 medium) green pepper, finely chopped
  • (1 small) onion, grated
  • (3 cloves) garlic, minced
  • (1 tsp.) salt
  • (1 tsp.) dried thyme
  • (1/2 tsp.) pepper
  • (3/4 lb.) lean ground beef (90% lean)
  • (3/4 lb.) lean ground turkey

Turkey BeefLoaf

A hearty vegetable and two beef meatloaf made with ground beef, ground turkey and shredded potatoes.

    Instructions

  1. 1Preheat oven to 375°F. Place a sheet of foil in a 15×10 in. baking pan, spray with cooking spray.
  2. 2In a large bowl, whisk together egg whites and 1/3 cup ketchup. Mix in potato, green pepper, onion, garlic, salt, thyme, pepper, beef and turkey. Form into a 10×4 in. loaf, place in
    prepared pan.
  3. 3Bake 45 minutes. Drain, top with rest of ketchup. Bake another 5-10 minutes, or until cooked through. Cool 10 minutes and serve.
