  • (16 slices) white bread, crusts removed
  • (3 cups) egg substitute
  • (2 cups) skim milk
  • (1 Tbsp.) Dijon mustard
  • (1/4 tsp.) black pepper
  • (1/2 lb.) turkey sausage, cooked and crumbled
  • (2 cups) 50% reduced-fat Swiss cheese, shredded
  • (1/2 cup) vegetables, such as broccoli florets, sliced green onions or chopped red pepper (optional)
  • Paprika, optional



Turkey and Swiss Breakfast Casserole

Hearty turkey sausage and shredded Swiss baked with eggs over a crust of layered white bread.

  1. 1Preheat oven to 350°F. Spray a 13×9 in. baking dish with cooking spray.
  2. 2Place bread in baking dish, overlapping the slices. In a large bowl, whisk together egg substitute, milk, mustard and pepper. Pour half over bread. Top with sausage, cheese, vegetables and rest of egg mixture.
  3. 3Top evenly with paprika and bake 25-45 minutes, or until set. Cool 5 minutes and serve.
