Ingredients:
  • (1 1/2 tsp.) bottled minced garlic
  • (1 tsp.) olive oil
  • (4 6-in.) pita rounds
  • (1/2 tsp.) salt, divided
  • (1/4 tsp.) black pepper, divided
  • (6 oz. package) portobello mushrooms
  • (2 medium) tomatoes, cut into 1/4 in. thick slices
  • (1/3 cup) goat cheese
  • (1/2 cup) fresh basil, chopped

Crispy garlic pitas topped with creamy goat cheese, hearty mushrooms, tomato and basil.

    Instructions

  1. 1Preheat grill pan to medium heat.
  2. 2In a small bowl, mix together garlic and oil. Use a pastry brush to brush both sides of pitas with oil. Top with 1/4 tsp. salt and 1/8 tsp. pepper. Cook 4 minutes, turning once. Set aside
    on a plate.
  3. 3Season mushrooms and tomatoes with 1/4 tsp. salt and 1/8 tsp. pepper. Cook mushrooms 6 minutes, turning once. Set aside, cook tomatoes 1 minute.
  4. 4Top each pita with goat cheese, mushrooms, tomatoes and basil. Serve and enjoy.
