  • (1/4 tsp.) baking soda
  • (1/4 tsp.) salt
  • (1 cup) butter, softened
  • (3/4 cup) granulated sugar
  • (1 large) egg
  • (1 tsp.) vanilla extract
  • (2 oz.) unsweetened chocolate, melted
  • (1/4 cup) unsweetened cocoa
  • (1 1/4 cups) sliced natural almonds, coarsely chopped
  • (1/2 cup) seedless red raspberry or apricot jam

  1. 1In a small bowl, mix together flour, baking soda and salt, set aside.
  2. 2In a large bowl, use an electric mixer on medium to beat together butter and sugar. Beat in egg, vanilla, chocolate and cocoa. Continue to beat on low while adding flour mixture, beat until combined.
  3. 3Preheat oven to 350°F. Spread almonds out on a sheet of waxed paper. Measure out 1 tsp. dough for each cookie and form into balls. Roll in almonds and place 1 1/2 inches apart on a large cookie sheet.
  4. 4Press your thumb into the middle of each cookie, then fill with 1/4 tsp. jam. Bake 14-15 minutes. Cool on wire racks and serve.
