  • (2) Earl Grey tea bags
  • (1/2 lb.) pitted prunes
  • (1/3 cup) sugar
  • (1 tsp.) grated lemon rind
  • (1/2 tsp.) vanilla extract



Tea Infused Prune Spread

Fresh prunes simmered in just-brewed Earl Grey tea make for a delicious spread for your favorite breakfast meals.

  1. 1Steep tea bags for 5 minutes in a teapot or kettle, covered. Remove tea bags and throw them away.
  2. 2Place a large saucepan over high heat. Add tea and prunes, bring to a boil. When boiling, cover and reduce heat to medium-high. Simmer 5 minutes, transfer to blender. Puree until smooth.
  3. 3Transfer mixture back to pan and place pan back over high heat. Add sugar and lemon rind, stir to combine.
  4. 4Bring to a boil then reduce heat back to medium and simmer 20 minutes, uncovered, stirring frequently. Add vanilla, stir.
  5. 5Remove from heat and transfer to plastic container. Cool in refrigerator at least 1 hour, up to 2 months. Serve with whole-wheat toast, muffins, fruit, etc.
