Ingredients:
  • (1 cup) canned solid-pack pumpkin
  • (1 cup) shredded carrot
  • (1/2 cup) sugar
  • (1/3 cup) dried cranberries or raisins, chopped
  • (1/4 cup) canola oil
  • (2 large) eggs
  • (1 cup) whole grain pastry flour
  • (1 tsp.) baking powder
  • (1 tsp.) ground cinnamon
  • (1/2 tsp.) baking soda
  • (1/4 tsp.) salt
  • (1/4 cup) shelled pumpkin seeds or chopped walnuts

Sweet Pumpkin Bars

Soft pumpkin and carrot bars packed with dried fruit and topped with pumpkin seeds.

    Instructions

  1. 1Preheat the oven to 350°F. Spray a 13×9 in. baking pan with cooking spray.
  2. 2Mix together pumpkin, carrot, sugar, cranberries, oil and eggs in a large bowl. Stir in flour, baking powder, cinnamon, baking soda and salt. Pour into greased pan.
  3. 3Top with pumpkin seeds and bake 22-25 minutes, or until spongey. Cool on wire rack, cut and serve.
