Ingredients:
  • (1/2 cup plus 1/3 cup plus 1 Tbsp.) sugar
  • (4 1/2 tsp.) quick-cooking tapioca
  • (1/4 tsp.) ground allspice
  • (5 cups) fresh or frozen blackberries, thawed
  • (2 Tbsp.) orange juice
  • (1 cup) all-purpose flour
  • (1/4 tsp.) baking soda
  • (1/4 tsp.) salt
  • (1/3 cup) vanilla yogurt
  • (1/3 cup) fat-free milk
  • (3 Tbsp.) butter, melted

Sweet Berry Cobbler

A simple and sweet blackberry cobbler with a buttery crust.

    Instructions

  1. 1Preheat oven to 350°F. Spray a 2 quart baking dish with cooking spray.
  2. 2Combine 1/2 cup sugar, tapioca and allspice in a large bowl. Toss in blackberries and orange juice. Set
    aside 15 minutes.
  3. 3Meanwhile, combine flour, 1/3 cup sugar, baking soda and salt in a large bowl. In a separate bowl, combine yogurt, milk and butter. Add to dry ingredients, stir to combine.
  4. 4In baking dish, top blackberries with flour mixture. Bake 20 minutes, top with 1 Tbsp. sugar and bake another 25-30 minutes. Serve and enjoy.
