  • (3 Tbsp.) apple cider vinegar
  • (1/2 cup) apple juice
  • (1/4 cup) canola oil
  • (4 tsp.) Dijon mustard
  • (1 Tbsp.) honey
  • (1 tsp.) poppy seeds
  • Salt and pepper to taste
  • (10 cups) rinsed and well-drained red leaf lettuce, coarsely chopped
  • (2/3 cup) walnut pieces, toasted
  • (3) pears, peeled, cored and cut into 3/4 in. pieces



Sweet and Sour Pear Salad

Fresh chopped pears served over red leaf lettuce with toasted walnuts in an apple vinegar dressing.

  1. 1Process vinegar, apple juice, canola oil, Dijon mustard and honey in a food processor until combined. Transfer to a large bowl, add poppy seeds and salt and pepper as needed.
    Set aside 1/4 cup.
  2. 2Toss lettuce and walnuts with dressing. Toss pears with reserved 1/4 cup dressing. Serve each salad with
    dressed pears.
