  • (8 oz.) penne pasta
  • (2 cloves) garlic, minced
  • (1/3 cup) walnuts, chopped
  • (3/4 cup) sun-dried tomatoes in oil, drained and
  • (2 Tbsp.) olive oil
  • (1 tsp.) basil
  • (1/2 block) firm tofu, pressed
  • Salt



Sun-Dried Penne

A vegetarian and vegan pasta dish of penne with crunchy walnuts, firm tofu and sun-dried tomatoes.

  1. 1Place 3 quarts of water into a large saucepan and bring to a boil over high heat. When boiling, add penne and cook about 8 minutes, or according to package directions.
  2. 2Meanwhile, in a large bowl combine minced garlic, walnuts, sun-dried tomatoes, oil and basil. Add tofu,
    mash with a spoon.
  3. 3Drain pasta, toss with tofu mixture. Season with a dash of salt. Serve and enjoy!
