  • (1/2 tsp.) baking soda
  • (1/2 tsp.) ground cinnamon

  • (1/2 cup) fat-free plain yogurt
  • (1/4 cup) canola oil
  • (2 large) eggs
  • (1/2 cup) brown sugar
  • (1 tsp.) lemon extract
  • (1/2 cup) dried plums, finely chopped
  • Confectioners’ sugar

  1. 1Preheat oven to 350°F. Spray a 9 in. round cake pan with cooking spray.
  2. 2Combine flour, baking powder, baking soda, cinnamon and a pinch of salt in a small bowl, set aside. In a large bowl, whisk together yogurt, oil and eggs. Beat in sugar and
    lemon extract.
  3. 3Add dry ingredients, stir to combine. Stir in dried plums.
  4. 4Pour into greased pan and bake 25-30 minutes, or until spongey. Cool on a wire rack 10 minutes. Serve with a dusting of confectioners’ sugar.
