  • (1 large) egg white
  • (1 tsp.) water
  • (1 cup) unsalted natural (unblanched) whole almonds
  • (1/3 cup) sugar
  • (1/4 tsp.) ground cinnamon
  • (1/2 tsp.) salt
  • (1 cup) low-fat granola
  • (1/2 cup) dried pineapple, chopped
  • (1/4 cup) golden raisins
  • (1/4 cup) dried cranberries
  • (1/4 cup) semisweet chocolate mini baking chips



Sugared Almond Snack Mix

Toasted cinnamon-sugar almonds with granola, dried fruit and mini chocolate chips.

  1. 1Preheat the oven to 275°F.
  2. 2In a medium bowl, use an electric mixer to beat together egg white and water until frothy. Toss in almonds. Drain in colander 10 minutes.
  3. 3In a large ziplock bag, combine sugar, cinnamon and salt. Transfer almonds to bag and shake to coat. Place on a large baking sheet.
  4. 4Bake 15 minutes, reduce oven to 250°F. Stir, bake another 35 minutes, stirring every so often. Set aside to
    cool 15 minutes.
  5. 5In a large bowl, toss together granola, pineapple, raisins, cranberries and chocolate chips. Enjoy!
