  • (1/8 tsp.) salt
  • (2 Tbsp.) toasted wheat germ
  • (1 cup) nonfat buttermilk
  • (1/4 cup) unsweetened applesauce
  • (2 tsp.) vegetable oil
  • (1 large) egg, lightly beaten
  • Sugar-free maple syrup (optional)
  • Fresh fruit slices (optional)

Applesauce adds moisture and sweetness to these buttermilk pancakes, served with fresh fruit slices on top.

    Instructions

  1. 1Spray a nonstick griddle or nonstick skillet with cooking spray and place over medium heat.
  2. 2In a medium bowl, combine flour, baking soda, salt and wheat germ. Use your hand to make a hole in the center of the mixture.
  3. 3In a separate bowl, combine buttermilk, applesauce, oil and egg. Pour into hole and stir until combined.
  4. 4Pour 1/4 cup batter at a time to form pancakes. Cook 2-3 minutes, or until tops start to bubble, flip and cook another minute. Repeat with remaining batter. Serve with syrup and fruit, if desired.
