spinach mushroom crepes
Ingredients:
  • (4) ready to use crepes
  • (8 oz.) sliced mushrooms
  • (1 Tbsp.) olive oil
  • (6 oz.) baby spinach
  • Salt and pepper to taste
  • (2 Tbsp.) shredded Swiss blend cheese

Spinach and Mushroom Crepes

Soft crepes filled with sauteed mushrooms, spinach and shredded Swiss cheese.

    Instructions

  1. 1Preheat oven to 350°F. Place crepes on baking sheets.
  2. 2Place a large frying pan over medium heat. Add oil. When hot, add mushrooms and saute 5-6 minutes. Add spinach, stir and cook another minute. Add salt and pepper as needed.
  3. 3Spoon 1/4 of mixture onto each crepe and top with 2 Tbsp. cheese. Fold over.
  4. 4Bake 5 minutes, or until cheese is melted and serve.
