  • (1/2 tsp.) chili powder
  • (1/8 tsp.) pepper
  • (1/2 lb.) boneless skinless chicken breast, cubed
  • (1/2 cup) balsamic vinegar
  • (2 tsp.) Crisco┬« Olive Oil
  • (5 oz.) part-skim mozzarella cheese, cubed
  • (18) cherry or grape tomatoes



Spiced Chicken Kabob Snackers

Lean chicken breasts marinated in a spice rub and served on skewers with mozzarella cheese and cherry tomatoes.

Preparation Time

About 15 minutes (plus 3 hrs chilling)

Cook Time

About 5 minutes


  1. 1In a large bowl, combine salt, chili powder and pepper. Toss in chicken, rubbing spices into meat. Add vinegar, cover and refrigerate 3-4 hours.
  2. 2Place a large skillet over medium heat. Add oil. When hot, add chicken and cook until browned on all
    sides. Let cool.
  3. 3Alternately thread 3 pieces each chicken, cheese and tomatoes onto wooden skewers. Chill and serve.
