Ingredients:
  • (2 cups) all-purpose flour
  • (1 cup) rolled oats
  • (1 cup) packed dark brown sugar
  • (1 1/2 tsp.) baking powder
  • (1/2 tsp.) baking soda
  • (1/2 tsp.) salt
  • (1/2 tsp.) apple-pie spice
  • (1 cup) fat-free milk
  • (3 Tbsp.) butter, melted
  • (1 tsp.) vanilla extract
  • (1 large) egg, lightly beaten
  • (1 1/2 cups) frozen blackberries, coarsely chopped
  • (1/4 cup) granulated sugar

Spiced Blackberry Muffins

Apple-pie spiced muffins with chopped blackberries and a crunchy sugar topping.

    Instructions

  1. 1Preheat oven to 400°F. Place 17 paper muffin cups into a muffin pan, spray with cooking spray.
  2. 2In a large bowl, combine flour, oats, brown sugar, baking power, baking soda, salt and apple pie spice. Use your hand to make a hole in the center.
  3. 3In a separate small bowl, whisk together milk, butter, vanilla and egg. Pour into the hole you made in the flour mixture and stir until combined. Fold in blueberries.
  4. 4Pour 1/4 cup batter into each muffin cup, bake 16 minutes. Remove from oven, sprinkle with sugar and bake another 3 minutes, or until spongey when touched. Let cool and serve.
