Ingredients:
  • (4) whole-wheat bagels, cut in half
  • (2 cups) shredded boneless chicken breast, skinless
  • (1/2 cup) BBQ sauce of your choice
  • (3 Tbsp.) red onions, chopped
  • (1/2 cup) lightly packed fresh cilantro, chopped
  • (1 1/2 cups) shredded part skim mozzarella
  • (1 cup) canned Italian Style diced tomatoes

Shredded BBQ Chicken Bagel Sandwiches

Shredded chicken tossed in your favorite barbeque sauce then piled on whole-wheat bagels with mozzarella cheese and baked until melty.

    Instructions

  1. 1Preheat oven to 400°F. Line a jelly roll pan
    with foil.
  2. 2Toss together chicken, barbeque sauce, red onions and fresh cilantro in a medium bowl.
  3. 3Place bottoms of bagels on the pan, top each with 1/4 cup chicken mixture, 3 Tbsp. cheese, 1/8 cup tomatoes and bagel top.
  4. 4Bake 10-12 minutes or until cheese is melted. Cut in half and enjoy!
