  • (1 Tbsp.) olive oil
  • (1/4 cup) shallots, minced
  • (2 cloves) garlic, minced
  • (1 lb.) carrots, julienned
  • (1/2 cup) defatted chicken stock
  • (1/4 tsp.) ground black pepper
  • Pinch of ground red pepper
  • (8 oz.) angel hair pasta
  • (1/4 cup) fresh basil, minced
  • (3 Tbsp.) grated Parmesan cheese



Savory Basil Carrot Pasta

Spiced julienned carrots with angel hair pasta, fresh basil and grated Parmesan cheese.

  1. 1Place a large, nonstick frying pan over medium heat. Add oil. When hot, add shallots and garlic, saute 5 minutes. Stir in carrots, stock, black and red peppers. Put a lid on it and
    cook 10 minutes.
  2. 2Fill a large pot with 2 quarts cold water and place over High heat. When boiling, add pasta and cook 4 minutes. Drain, transfer to a platter.
  3. 3Uncover carrots and continue to cook until liquid is mostly evaporated. Pour over pasta. Toss with basil and Parmesan and serve.
