Ingredients:
  • (1 small clove) garlic, finely chopped
  • (1/4 cup) low-fat mayonnaise
  • (2 Tbsp.) fresh tarragon or basil, chopped can use (1 tsp. dried)
  • (1 Tbsp.) lemon juice
  • (1/4 tsp.) freshly ground pepper
  • Pinch of salt
  • (8 slices) whole-grain country bread
  • (4 slices) provolone cheese (about 4 ounces)
  • (2 large) tomatoes, sliced 1/2 inch thick

Rustic Tomato Sandwiches

Crispy whole-grain cheese toast topped with a garlic herb mayo and thick sliced tomatoes.

    Instructions

  1. 1Position oven rack to top third position, then preheat broiler. Place bread onto a baking sheet.
  2. 2Using the side of a small knife, crush the garlic on a cutting board until it forms a paste. In a small bowl, combine garlic paste, mayonnaise, tarragon (or basil), lemon juice, pepper and
    salt.
  3. 3When preheated, put bread under broiler for 1-2 minutes. Flip, top 4 pieces with cheese, broil another 1-2 minutes until melted.
  4. 4To assemble sandwiches, top one plain bread slice with herb mayo, a tomato slice and a cheese bread slice, cheese side down. Serve and enjoy!
