  • (2 tsp.) olive oil
  • (1 lb.) boneless, skinless chicken breasts
  • (1/2 tsp.) salt
  • Ground black pepper
  • (1 pint) grape tomatoes, halved
  • (40) pitted black olives
  • (2 cloves) garlic, smashed
  • (1 sprig) fresh thyme and/or rosemary
  • Chopped parsley, optional



Rustic Chicken Penne w/Skillet Tomato Sauce

Multigrain penne pasta with grilled chicken in a chunky herb tomato sauce.

  1. 1Fill a large pot with 2 quarts cold water and place over high heat. When boiling, add pasta and cook according to package. Drain and set aside.
  2. 2Preheat grill to medium-high.
  3. 3Toss chicken with 1 tsp. oil, salt and pepper. Grill 6-10 minutes, turning once halfway through.
  4. 4In a cast iron skillet, stir together 1 tsp. oil, tomatoes, olives, garlic and rosemary. Place on grill and cook until juicy. Set chicken aside 5 minutes, remove rosemary from
