  • (1 large head) garlic
  • (4 Tbsp.) extra-virgin olive oil, divided
  • (2 Tbsp.) balsamic or red-wine vinegar
  • (1 Tbsp.) lime juice
  • (1/8 tsp.) salt
  • (1 medium) shallot, finely chopped
  • (1/4 cup) pine nuts, toasted
  • (2 oz.) goat cheese, crumbled
  • (6 cups) dandelion greens or spinach, tough stems removed and cut into bite-size pieces
  • Freshly ground pepper, to taste



Roasted Garlic Greens

A warm roasted garlic dressing coats dandelion greens and is served with toasted pine nuts and crumbled goat cheese.

  1. 1Preheat oven to 400°F. Place a piece of foil in a baking dish.
  2. 2Remove paper from garlic head and cut the tips off. Place garlic on foil, top with 1 Tbsp. oil and wrap. Bake 40-60 minutes. Set aside to cool, unwrapped.
  3. 3When cool, remove the skins and put the garlic into a food processor along with 3 Tbsp. oil, vinegar, lime juice, salt and pepper. Process until smooth.
  4. 4Place a small saucepan over medium heat. Add blended dressing and heat 1-2 minutes. Stir in shallot, simmer another 3-5 minutes.
  5. 5Meanwhile, place greens into a large bowl. Toss greens with dressing. Serve with pine nuts, cheese and a sprinkle of pepper, if desired.
