  • (4) roasted bell peppers, peeled, seeded and sliced
  • (2 Tbsp.) fresh basil, finely chopped
  • (1 Tbsp.) balsamic vinegar
  • Salt & freshly ground pepper, to taste
  • (8 slices) whole-wheat country bread, sliced 1/2 in.
    thick, toasted
  • (1 clove) garlic, peeled and cut in half
  • (2 oz.) fresh mozzarella, cut into thin strips
  • (2 tsp.) extra-virgin olive oil



Roasted Bell Pepper Toasts

Garlic rubbed whole-wheat toast topped with roasted bell peppers and melted mozzarella cheese.

  1. 1With rack 6 inches from heat,
    preheat the broiler.
  2. 2Rub each slice of bread on both sides with cut garlic and place on a baking sheet.
  3. 3In a medium bowl, mix together peppers, basil, vinegar, salt and pepper to taste. Divide evenly between toasts, top with mozzarella and a drizzle of olive oil.
  4. 4Broil 1-2 minutes, or until cheese is melted and serve.
