Ingredients:
  • (1 Tbsp.) olive oil
  • (1 medium) onion, coarsely chopped
  • (4 cloves) garlic, minced
  • (1 Tbsp.) fresh thyme, chopped (or 1 tsp. dried)
  • (2 16-oz. cans) cannellini beans, rinsed and drained
  • (1/2 cup) water
  • (4 canned) plum tomatoes, drained
  • (14 oz. can) fat-free, less-sodium chicken broth
  • (3 packed cups) baby spinach leaves, coarsely
    chopped
  • (2 cups) skinless, boneless rotisserie chicken
    breast, shredded
  • (1/4 tsp.) salt
  • (1/4 tsp.) black pepper

Red White and Green Stew

Red tomatoes, white beans and green spinach come together with shredded chicken in this quick and easy stew.

    Instructions

  1. 1Place a medium saucepan over medium-high heat. Add oil. When hot, add onion, cook 5 minutes, stirring frequently. Stir in garlic and thyme, cook another minute.
  2. 2Add beans, water, tomatoes and broth, turn up heat to high. When bubbling, reduce heat and simmer 5 minutes, using a wooden spoon to crush tomatoes.
  3. 3Stir in spinach and chicken, cook 2 minutes. Season with salt and pepper, serve.
