  • (2 Tbsp.) reduced-fat mayonnaise
  • (4 tsp.) Dijon mustard
  • Pinch of cayenne pepper
  • (2 8-oz. loaves) “cocktail-size” pumpernickel or rye bread (about 44 slices)
  • (1 cup) grated Fontina or Swiss cheese
  • (6 oz.) turkey pastrami, very thinly sliced
  • Freshly ground pepper
  • (1 cup) sauerkraut, rinsed and squeezed dry
  • (2 tsp.) canola oil

  1. 1In a small bowl, combine mayonnaise, mustard and cayenne pepper. Spread onto all the slices of bread.
  2. 2Top half of the slices with half of the cheese, then evenly distribute turkey pastrami, black pepper, sauerkraut and rest of the cheese. Sandwich with remaining bread slices.
  3. 3Place a large nonstick skillet over medium heat. Brush just enough oil to cover the pan and cook the sandwiches in batches, until toasted. Repeat with all of the oil and
