  • (9 oz. package) refrigerated tricolor cheese tortellini
  • (2 cups) sugar snap peas, trimmed
  • (2 Tbsp.) refrigerated pesto
  • (1 cup) cherry tomatoes, halved
  • (1/4 tsp.) ground black pepper
  • Fresh basil, optional



Pesto Tortellini Salad

Tri-color cheese tortellini with cherry tomatoes and sugar snap peas in a thick pesto sauce.

  1. 1Fill a large pot with 2 quarts cold water and place over High heat. Once boiling, add tortellini and cook 5 minutes, stirring every so often.
  2. 2Stir in peas and cook another 3 minutes. Drain and place under cold running water until cooled.
  3. 3Transfer to a large bowl. Add pesto, tomatoes and pepper, toss to combine. Serve with basil.
