Ingredients:
  • (1 tsp.) unsalted butter
  • (2 Tbsp.) fresh orange juice
  • (2 Tbsp.) brown sugar
  • (1/2 tsp.) vanilla extract
  • (1/4 tsp.) ground cinnamon
  • (8 oz.) frozen sliced peaches
  • (2/3 cup) part-skim ricotta cheese
  • (1 tsp.) fresh lime juice
  • (2 Tbsp.) nutty fiber mix
  • (1) fresh peach, sliced

Peaches n’ Cream Parfaits

Sliced peaches cooked in a cinnamon-orange juice sauce, layered with lime ricotta cheese and fiber mix.

    Instructions

  1. 1Place a medium skillet over medium heat. Add butter. When melted, move off heat and add orange juice, sugar, vanilla and cinnamon. Place back on heat and stir until sugar is
    dissolved.
  2. 2Add peaches. Cover and cook 4 minutes, stir, cook another 5 minutes. Let cool 5 minutes.
  3. 3Stir together ricotta cheese and lime juice in a small bowl.
  4. 4In 2 serving bowls, layer half each of peaches and ricotta. Top with 2 Tbsp. peach juice, 1 Tbsp. fiber mix and peach slices. Enjoy!
