Ingredients:
  • (1 cup) uncooked spaghetti
  • (1) boneless skinless chicken breast half
  • (1/4 tsp.) lemon-pepper seasoning
  • (1 cup) fresh broccoli florets
  • (1/4 cup) sweet red pepper, chopped
  • (1/4 cup) red onion, chopped
  • (1/4 cup) fat-free Parmesan peppercorn ranch salad
    dressing
  • (1 Tbsp.) grated Parmesan cheese
  • (1 1/2 tsp.) lemon juice

Parmesan Ranch Chicken Pasta Salad

Grilled lemon-pepper chicken tossed with tender spaghetti noodles, vegetable and a Parmesan ranch dressing.

    Instructions

  1. 1Preheat grill to medium heat. Fill a medium pot with 1 quart cold water and place over High heat. When boiling, add pasta and cook according to package. Drain.
  2. 2Sprinkle both sides of chicken with lemon-pepper seasoning. Use tongs and a paper towel dipped in olive oil to grease the grill rack. Grill chicken 14-16 minutes, covered, flipping once. Cut into cubes.
  3. 3Toss pasta and chicken with remaining ingredients in a large bowl. Serve and enjoy!
