  • (4 oz.) bittersweet or semisweet chocolate, finely
    chopped, divided
  • (6 Tbsp.) all-purpose flour
  • (1/4 tsp.) baking powder
  • (1/8 tsp.) baking soda
  • Salt
  • (1 large) egg white
  • (3 Tbsp.) light brown sugar
  • (3 Tbsp.) unsweetened applesauce
  • (2 tsp.) canola oil
  • (3/4 tsp.) orange extract
  • (1 1/2 tsp.) whole milk

Orange Chocolate Mini Muffins

Moist chocolate muffins flavored with orange and drizzled with chocolate icing.

    Instructions

  1. 1Preheat the oven to 350°F. Spray a standard mini muffin pan with cooking spray.
  2. 2In a microwave-safe bowl, microwave 2 1/2 oz. chocolate on High for 60 seconds. Stir, cook another 10 seconds at a time if needed, until melted.
  3. 3In a small bowl, combine flour, baking powder, baking soda and a pinch of salt, set aside. In a medium bowl, beat egg white until fluffy.
  4. 4Stir in brown sugar, applesauce, 1 1/2 tsp. oil, orange extract and melted chocolate. Add dry ingredients, stir to combine.
  5. 5Divide evenly between muffin cups and bake 10 minutes, or until set. Cool in pan 3 minutes, transfer to
    wire rack.
  6. 6In a microwave-safe bowl, microwave 1 1/2 oz. chocolate, milk and 1/2 tsp. oil on High 30 seconds, or until melted. Stir, drizzle over mini muffins and serve.
