  • (2 Tbsp.) red-wine vinegar
  • (2 Tbsp.) orange marmalade
  • (1 tsp.) Dijon mustard
  • (1 tsp.) cornstarch
  • (1 lb.) chicken tenders
  • (1/2 tsp.) kosher salt
  • (1/4 tsp.) freshly ground pepper
  • (6 tsp.) extra-virgin olive oil, divided
  • (2 large) shallots, minced
  • (1 tsp.) freshly grated orange zest

Orange Chicken Tenders

Lean chicken tenders cooked in a sweet and tangy orange mustard sauce.

    Instructions

  1. 1In a medium bowl, whisk together broth, vinegar, marmalade, mustard and cornstarch.
  2. 2Place a large skillet over medium-high heat. Add 4 tsp. oil. Season both sides of chicken tenders with salt and pepper, add to pan.
  3. 3Cook 4 minutes or until golden brown, turning once. Remove from pan and cover with foil. Place pan back over heat and add 2 tsp. oil and shallots.
  4. 4Cook about 30 seconds, stirring. Re-whisk broth and pour into pan. Reduce heat and simmer 1-2 minutes until thickened, scraping the bottom of the pan occasionally.
  5. 5Place chicken back into pan, continue to simmer another minute, turning once. Add orange zest and serve.
