  • (3 small) beets, trimmed
  • (8 cups) loosely packed arugula
  • (4 oz. slice) low-sodium deli roast beef, cut into
  • (1/2 cup) crumbled goat cheese
  • (2 Tbsp.) pine nuts, toasted



Orange Beef and Beet Salad

Thin strips of deli roast beef, beets, crumbled goat cheese and toasted pine nuts served on a bed of arugula.

  1. 1In a large bowl, grate 1 tsp. orange rind and 2 Tbsp. juice. Add vinegar, shallots and mustard, whisk to combine. Add oil while whisking.
  2. 2In a microwave-safe bowl, combine beets and enough water to fill the bowl halfway. Cover and microwave on High 8 minutes. Drain and set aside to cool.
