Ingredients:
  • (3) asparagus spears or 12 snow peas, trimmed and thinly sliced
  • (8 oz.) crabmeat, shells or cartilage removed
  • (1/3 cup) celery, finely chopped
  • (1/4 cup) red bell pepper, finely chopped
  • (1) scallion, finely chopped
  • (4 tsp.) lemon juice
  • (1 Tbsp.) low-fat mayonnaise
  • (1/4 tsp.) Old Bay seasoning
  • Hot sauce
  • Freshly ground pepper, to taste
  • (4) whole-wheat English muffins, split and toasted
  • (1/2 cup) shredded Swiss cheese

Toasted English muffins topped with a creamy crab salad full of crunchy vegetables and melted cheese.

    Instructions

  1. 1With oven rack in upper third position, preheat broiler. Place muffin halves on a baking sheet.
  2. 2In a microwave-safe bowl, combine asparagus and 1 tsp. water. Cover and microwave on High 30 seconds.
  3. 3Stir in crab, celery, bell pepper, scallion, lemon juice, mayonnaise, Old Bay, 2-5 dashes of hot sauce and pepper.
  4. 4Top each muffin with 1/4 cup crab salad and 1 Tbsp. cheese. Broil 3-6 minutes to melt cheese and serve.
