  • (1 1/2 lb.) small red potatoes, halved or quartered
  • (1/4 cup) olive oil
  • (1/2 tsp.) salt
  • (4) boneless beef tenderloin steaks
    (4 oz. each), well-trimmed
  • (3/4 tsp.) coarsely ground black pepper
  • (1 Tbsp. plus 1 tsp.) grainy mustard
  • (3 Tbsp.) reduced-fat sour cream
  • (1 small) plum tomato, finely chopped
  • (2 Tbsp.) fresh chives or scallion greens, snipped
  • (1 Tbsp.) prepared horseradish
  • (1 small) shallot, minced

Broiled beef tenderloin steaks topped with grainy mustard and served with tender red potatoes and a creamy herb sour cream sauce.

  1. 1Preheat oven to 425°F. Spray a broiler-pan rack with cooking spray.
  2. 2In a 9×9 in. baking dish, toss potatoes with oil and 1/4 tsp. salt. Bake 30 minutes, tossing occasionally. Set aside with a foil tent.
  3. 3Season both sides of steak with pepper and 1/4 tsp. salt. Broil on greased broiler rack 2-4 in. from heat for 4-5 minutes. Flip, top evenly with 1 Tbsp. mustard.
  4. 4Cook another 3-4 minutes, or longer according to preference on doneness. Set aside 10 minutes.
  5. 5In a small bowl, combine sour cream, tomato, chives, horseradish, shallot and 1 tsp. mustard. Serve steak w/ potatoes and sour cream sauce. Enjoy!
