meaty cheese quiche
  • (1 lb.) sweet Italian turkey sausage links, removed from casings
  • (1 medium) red onion, thinly sliced
  • (2 cups) mushrooms, sliced
  • (4 cups) baby spinach
  • (4) eggs
  • (2) egg whites
  • (1/2 cup) 1% milk
  • (1/4 tsp.) freshly ground pepper
  • (6 sheets) phyllo dough, defrosted according to package
  • (1/4 cup) plain dry breadcrumbs
  • (1/4 cup) shredded Gruyere cheese



Meaty Cheese Quiche

Flaky phyllo dough topped with one pound of turkey sausage, veggies, eggs and cheese.

  1. 1Preheat oven to 350°F. Spray a 9 in. pie pan with cooking spray.
  2. 2Place a large, nonstick skillet over medium-high heat. Add sausage, breaking it up with a wooden spoon. Cook 5 minutes. Drain on paper towels.
  3. 3Place the pan back on the heat, spray with cooking spray. Add onion and mushrooms, cook 4-5 minutes, stirring often. Stir in spinach and cook another minute. Add to sausage.
  4. 4Cover phyllo with a sheet of wax paper and a damp towel. Working one sheet a time, place into greased pan, spray with cooking spray, sprinkle breadcrumbs and repeat to form a crust. Trim off the long edges.
  5. 5Top crust with sausage mixture. Whisk together eggs, egg whites, milk and pepper, pour over sausage. Sprinkle cheese over top.
  6. 6Bake 40-45 minutes, or until golden brown. Cool 10 minutes and serve.
