marinated chicken skewers yogurt sauce
Ingredients:
  • (1/2 cup) canola oil
  • (1/2 cup plus 1 Tbsp.) lemon juice
  • (4 tsp.) cumin
  • (2 tsp.) ground coriander
  • (2 tsp.) paprika
  • (4 cloves) garlic, smashed
  • (3 lb.) boneless, skinless chicken breasts, cut into
    1 in. pieces
  • (2) red bell peppers, seeded and cut into 1 in. pieces
  • (3 small) zucchini, cut into 1 in. pieces
  • (3 small) summer squash, cut into 1-in. pieces
  • (1 cup) plain low-fat Greek yogurt
  • (2 Tbsp.) tahini
  • Salt and pepper
  • (2) red onions, halved, each half cut into quarters
  • Cooked brown rice, optional

Marinated Chicken Skewers w/Yogurt Sauce

Lean chicken breasts and summer vegetables marinated in a lemon spice mixture, grilled and served with a tahini yogurt sauce.

Preparation Time

About 20 minutes (plus 2 hrs chilling)

About 6 minutes

    Instructions

  1. 1Whisk together 1/2 cup lemon juice, cumin, coriander, paprika and garlic.
  2. 2Separate into two bowls, add chicken to one and peppers, zucchini and squash to the other. Toss both to coat, cover and refrigerate 2 hours.
  3. 3In a small bowl, whisk together yogurt, tahini, 1 Tbsp. lemon juice and 1/2 tsp. salt. Cover and refrigerate until ready to serve.
  4. 4Preheat outdoor grill or indoor grill pan to medium-high. Transfer chicken and vegetables to paper towels, pat to remove excess marinade.
  5. 5On 12 metal skewers, alternate chicken and vegetables until skewers are full. Sprinkle with salt and pepper. Dip a small towel in olive oil and use it to grease the grill
    rack.
  6. 6Grill 4-6 minutes, turning occasionally. Serve with chilled sauce over brown rice.
