Ingredients:
  • (2 large) Russet potatoes, each cut lengthwise into
    4 slices
  • (2 tsp.) canola oil
  • (3/4 tsp.) chili powder
  • (1/8 tsp.) salt
  • (4 slices) low-fat turkey bacon
  • (1) Hass avocado, cut into 16 slices
  • (1/2 cup) shredded reduced-fat Cheddar cheese
  • (1/4 cup) fat-free sour cream, optional
  • Hot pepper sauce to taste, optional

Loaded Potato Stackers

Thick sliced Russet potatoes baked until tender and topped with crispy turkey bacon, creamy avocado, cheese and sour cream.

    Instructions

  1. 1Preheat grill to medium heat.
  2. 2In a large bowl, toss potatoes with oil, chili powder and salt. Place over direct heat on grill for 10 minutes, turning once. Spray a sheet of heavy-duty foil with cooking spray and place on the grill, oil-side up.
  3. 3Transfer potatoes to foil and cook over indirect heat another 20 minutes, or until tender. Grill turkey bacon over direct heat 2 minutes, turning once, set aside.
  4. 4Top each potato with 1/2 slice bacon, 2 slices avocado and 1 Tbsp. cheese. Continue to grill over indirect heat 4 minutes. Serve with sour cream and hot sauce.
