Ingredients:

  • (2 cups) celery, sliced
  • (2 cups) mushrooms, sliced
  • (2 cups) sweet onion, chopped
  • (1) rotisserie chicken, skin and meat removed
  • (2 Tbsp.) minced garlic
  • Black pepper to taste
  • (3 cups) boiled and drained whole-wheat blend pasta
  • (8 cups) low-sodium chicken broth
  • (1 1/2 Tbsp.) fresh herb blend, such as parsley, sage and oregano, chopped

An easy chicken noodle soup made in one pot with aromatic vegetables and herbs.

    Instructions

  1. 1Place a large nonstick saucepan over medium-high heat. Add olive oil. When hot, add celery, mushrooms and onion, saute 5 minutes. Add chicken garlic and black pepper, stir to combine.
  2. 2Stir in pasta, chicken broth and herbs. Bring to a boil, then reduce heat, cover and simmer 10-15 minutes. Serve and enjoy!
