  • (1 cup plus 2 Tbsp.) low-fat milk
  • (2 large) eggs
  • (1/4 cup) egg substitute
  • (3 Tbsp.) unsweetened cocoa powder
  • (1/2 cup) whole-wheat flour
  • (1/2 cup) unbleached white flour
  • (3 Tbsp.) granulated sugar
  • (1/2 tsp.) salt
  • (1 Tbsp.) canola oil

Light and Fluffy Chocolate Crepes

Simple and delicious chocolate crepes that can be topped any way you choose!

Preparation Time

About 1 minutes (plus 30 minutes resting)

About 25 minutes

    Instructions

  1. 1Blend all ingredients in a food processor or blender until combined, scrape the sides, then blend again until smooth. Place in a plastic container, cover and let sit for 30 minutes.
  2. 2Spray a crepe pan or small nonstick skillet with cooking spray and place over medium heat.
  3. 3Add 1/2 cup batter to pan, then tilt pan to spread batter around the bottom. Let cook about 1 minute, then gently flip and cook another 30 seconds.
  4. 4Repeat with rest of batter, spraying pan each time. Serve with whipped cream, fruit and/or a dusting of powdered sugar.*
