lemon zucchini salad
  • (1 medium) lemon, peeled
  • (2 Tbsp.) extra-virgin olive oil
  • (1/2 tsp.) freshly ground pepper
  • (1/4 tsp.) salt
  • (2 lb.) small zucchini, cut into 1/2 in. thick slices lengthwise
  • (1/2 cup) sliced almonds, toasted
  • (1/3 cup) thinly shaved Parmigiano-Reggiano cheese



Lemon Zucchini Salad

A simple grilled zucchini salad topped with toasted almonds, shaved cheese and boiled lemon peel.

  1. 1Fill a small saucepan 3/4 full with water and place over medium-high heat to boil.
  2. 2Cut lemon peel into slivers and add to boiling water. Cook 4-5 minutes, drain.
  3. 3Preheat outdoor grill or indoor grill pan to medium-high. Dip a small towel into olive oil and use it to grease the grill rack.
  4. 4Grill zucchini 3-4 minutes per side. Meanwhile, squeeze lemon juice into a small bowl. Whisk in oil,
    pepper and salt.
  5. 5Top grilled zucchini with dressing, almonds, cheese and lemon peel. Serve.
