lemon farro tomato salad
  • (1 1/2 tsp.) coarse salt
  • (1 cup) farro grain
  • (6) plum tomatoes, cored and halved lengthwise
  • (1/2 cup) extra-virgin olive oil, divided
  • (2 cloves) garlic, finely chopped
  • (1/4 tsp.) coarse-ground pepper
  • (2 Tbsp.) lemon juice
  • (1/2 cup) feta, crumbled
  • (1/2 cup) pitted kalamata olives, halved
  • (2 tsp.) fresh thyme leaves, chopped



Lemon Farro and Tomato Salad

Roasted plum tomatoes with warm farro grain, feta cheese and olives in a bright lemon vinaigrette.

  1. 1Place 6 cups cold water in a large pot and place over High heat. When boiling, add 1 tsp. salt and farro. Boil 40-45 minutes, drain and set aside.
  2. 2Meanwhile, preheat oven to 400°F. Place tomatoes flesh side down on a baking pan. Brush with 1 Tbsp. oil, top with garlic, 1/4 tsp. salt and pepper. Roast 10 minutes, increase heat to broil and cook 5 minutes.
  3. 3In a large bowl, combine lemon juice and rest of salt. While whisking, stream in 1/4 cup olive oil, set aside.
  4. 4Place a medium skillet over medium-high heat. Add rest of olive oil. When hot, toss in farro and cook 2-3 minutes, or until warm.
  5. 5Pour into bowl with lemon juice, add feta, olives and thyme. Toss, add tomatoes and serve.
