  • (6 medium) garden fresh or vine-ripened tomatoes, cored and cut into 1/2 in. thick slices
  • (1/2 cup) red onion, thinly sliced and separated
    into rings
  • (2) shallots, sliced thin
  • (6 Tbsp.) lite or reduced fat Italian-style salad
    dressing
  • (1/3 cup) mixed fresh herbs such as basil, parsley, and tarragon, minced
