Ingredients:
  • (2 1/4 cups) cake flour
  • (1 cup plus 2 Tbsp.) cocoa, divided
  • (1/2 tsp.) salt
  • (1/4 tsp.) baking powder
  • (1/4 tsp.) baking soda
  • (1 cup) unsalted butter, softened
  • (2 cups) granulated sugar
  • (1 cup) firmly packed dark brown sugar
  • (6 large) eggs
  • (3/4 tsp.) almond extract, divided
  • (1 1/4 cups) sour cream
  • (1 cup) confectioners’ sugar
  • (6 Tbsp.) heavy cream
  • (2 Tbsp.) sliced almonds

Iced Chocolate Loaf Cakes

Moist chocolate cakes with a thick cocoa icing and almonds.

    Instructions

  1. 1Preheat oven to 325°F. Spray 2 loaf pans with cooking spray and place a sheet of parchment paper in the bottom of each.
  2. 2In a large bowl, whisk together flour, cocoa, salt, baking powder and baking soda, set aside.
  3. 3In another large bowl, use an electric mixer to beat together butter, granulated sugar and brown sugar. Add eggs one at a time, beating well after each addition.
  4. 4Beat in 1/2 tsp. almond extract and sour cream.
  5. 5Add 1/3 flour mixture at a time, beating well after each addition. Divide evenly between pans. Bake 1 hr, 20 min, or until a toothpick comes out clean. Cool on wire racks, take out of pans after 15 min.
  6. 6Meanwhile, combine confectioners’ sugar, 2 Tbsp. cocoa, cream and 1/4 tsp. extract. Ice each cake, top with almonds and serve.
