Ingredients:
  • (12 oz.) whole-wheat short pasta, such as shells or
    twists
  • (8 oz.) hot Italian turkey sausage links, removed
    from casings
  • (3 cloves) garlic, chopped
  • (8 cups) arugula or baby spinach
  • (2 cups) cherry tomatoes, halved
  • (1/2 cups) finely shredded Pecorino Romano or Parmesan cheese, plus more to taste
  • (1 tsp.) freshly ground pepper
  • (1/4 tsp.) salt
  • (1 Tbsp.) extra-virgin olive oil

Hot Turkey Sausage Pasta w/Arugula and Tomatoes

Whole-wheat pasta with hot Italian turkey sausage, peppery arugula and juicy cherry tomatoes.

    Instructions

  1. 1Fill a large pot with 4 quarts cold water and place over High heat. When boiling, add pasta and cook 9-11 minutes, or follow cooking times on package.
  2. 2Place a large, nonstick skillet over medium-high heat. Add sausage and cook 5 minutes, breaking it up with a wooden spoon.
  3. 3Add garlic, arugula and tomatoes, stir to combine and cook another 3 minutes. Take off heat and cover, set
    aside.
  4. 4In a large bowl, mix together 1/2 cup cheese, pepper and salt. Drain pasta, saving 1/2 cup liquid. Add liquid to cheese mixture, along with olive oil, whisk to combine. Toss in
    pasta.
  5. 5Top pasta with sausage and extra cheese and serve.
