Ingredients:
  • (1 Tbsp.) canola oil
  • (1/2 cup) turnip, chopped
  • (1/2 cup) celery, chopped
  • (1/2 cup) onion, chopped
  • (1/2 tsp.) dried thyme
  • (2) bay leaves
  • (1 lb.) green split peas
  • (8 cups) vegetable broth
  • (1/4 tsp.) salt
  • (1 tsp.) hot-pepper sauce

Hearty Split Pea Soup

Slow simmered split pea soup with sauteed veggies and herbs, pureed until smooth and creamy.

    Instructions

  1. 1Place a large pot over medium-high heat. Add oil, move around to coat the bottom of the pot. When hot, add turnip, celery, onion, thyme and bay leaves. Cook 4 minutes, stirring
    occasionally.
  2. 2Stir in peas and broth. Bring to a rapid simmer, then cover and simmer on medium-low 2 hours. Remove bay leaves.
  3. 3Transfer to a blender (in batches if necessary) and puree until smooth. Season with salt and hot-pepper sauce, serve and enjoy.
