  • (1 1/2 cups) sliced potato
  • (1/2 cup) onion, chopped
  • (1/2 cup) red bell pepper, chopped
  • (1 clove) garlic, minced
  • (1/4 cup) sliced pitted manzanilla or green olives
  • (1 Tbsp.) fresh oregano, minced (or 1 tsp. dried)
  • (1/2 cup) shredded part-skim mozzarella cheese
  • (8 large) egg whites
  • (4 large) eggs
  • (1/4 tsp.) salt
  • (1/8 tsp.) pepper
  • (1/2 tsp.) olive oil, divided



Hearty Potato Omelettes

Hearty potatoes with sauteed vegetables in a fluffy egg and cheese omelette.

About 40 minutes


  1. 1In a small saucepan, cover potatoes with water. Place over High heat. When boiling, reduce heat and simmer 15 minutes. Drain and set aside to cool.
  2. 2Place a medium nonstick skillet over medium heat. Add onion, bell pepper and garlic. Saute 8 minutes.
  3. 3Meanwhile, dice potato. Add to pan with olives and oregano. Cook another minute, take off heat and add cheese. Stir and set aside.
  4. 4In a small bowl, whisk together egg whites, eggs, salt and pepper. Spray a small nonstick skillet with cooking spray and place over medium-high heat.
  5. 5Add half of eggs and swirl the pan to spread the mixture around. Cook 3 minutes and flip.
  6. 6Add 1 cup potato mixture to half of pan, fold omelette over. Cook 1 minute, flip and cook another minute. Repeat with remaining ingredients and serve.
