hearty mushroom omelette
  • (1) uncooked breakfast sausage patty, crumbled (our recipe would work great for this)
  • (1/2 cup) chopped onion
  • (1/2 cup) sliced mushrooms
  • (1/4 cup) chopped green bell pepper
  • (1/4 cup) chopped red bell pepper
  • (1/4 cup) chopped yellow bell pepper
  • (1/4 cup) chopped orange bell pepper
  • (1/2 cup) Cheese & Chive Egg Beaters
  • (3/4 oz.) Laughing Cow Light Garlic & Herb cheese, chopped
  • salt, ground black pepper



Hearty Mushroom Omelette

This great tasting, high protein breakfast will start your day off right.

  1. 1Spray a medium sized skillet with cooking spray and heat it over medium-high heat.
  2. 2Place the sausage, onion, mushrooms, and bell peppers in the skillet.
  3. 3Cook, stirring occasionally, for 4 to 6 minutes or until the sausage is browned and the vegetables are tender.
  4. 4Remove from the skillet, set aside and cover. Turn the skillet down to medium heat and spray it again, then add the egg beaters.
  5. 5Cook for two to three minutes, flip over. Add the mushroom mixture and sprinkle cheese on top.
  6. 6Fold the omelet in half and cook for another minute until the cheese is melted. Sprinkle with salt and pepper, garnish if desired and serve.
